Agar is a polysaccharide complex composed of approximately 70% agarose and 30% agaropectin.
Agarose: Neutral gelling fraction consisting of a linear polymer of alternating units of D-galactose and 3,6-anhydrogalactose.
Agaropectin: A non-gelling fraction consisting of D-galactose units linked in 1,3-glycosidic linkages, some of which are sulfated at the 6-position.
Agar-A is a bacteriological grade agar of the highest quality. It is used in microbiology and bacteriology to make solid culture media for microorganisms; as an antifouling agent in bakery, confectionery, meat and poultry products; as a gelling agent in cosmetics, desserts and beverages; as a corrosion inhibitor; as a sizing agent for paper and silks; in adhesives; in the dyeing and printing of textiles and fabrics; and as a protective colloid in ice cream, pet food, health foods, laxatives, pharmaceuticals, dental impressions, laboratory reagents and photographic emulsions.
